Pineapple Cupcakes

Pineapple Cupcakes

Ingredients

  • 2 c four
  • 1 tsp baking powder
  • 12 tsp baking soda
  • 1 tsp salt
  • 12 c shortening
  • 12 c granulated sugar
  • 12 c brown sugar
  • 2 eggs
  • 12 c crushed pineapple
  • 12 c pineapple juice
  • 1 tsp vanilla or pineapple flavoring
  • 1 small pkg mint chocolate chips

Directions

  1. Sift together first 4 ingredients and set aside
  2. Mix together shortening white sugar and brown sugar blend in 2 eggs and beat together 1 minute
  3. Add pineapple and juice then dry ingredients blend
  4. Add flavoring and chocolate chips
  5. Fill cupcake cups 34 full
  6. Bake at 350 for 20 to 25 minutes
  7. Frost when cool
