Pineapple Cupcakes

Ingredients
- 2 c four
- 1 tsp baking powder
- 12 tsp baking soda
- 1 tsp salt
- 12 c shortening
- 12 c granulated sugar
- 12 c brown sugar
- 2 eggs
- 12 c crushed pineapple
- 12 c pineapple juice
- 1 tsp vanilla or pineapple flavoring
- 1 small pkg mint chocolate chips
Directions
- Sift together first 4 ingredients and set aside
- Mix together shortening white sugar and brown sugar blend in 2 eggs and beat together 1 minute
- Add pineapple and juice then dry ingredients blend
- Add flavoring and chocolate chips
- Fill cupcake cups 34 full
- Bake at 350 for 20 to 25 minutes
- Frost when cool
