Pineapple Minute Tapioca

Ingredients
- 12 c Minute tapioca
- 14 c sugar
- pinch of salt
- 1 qt hot water
- 1 c pineapple crushed drained
Directions
- Mix tapioca with the sugar then the hot water and stir
- The tapioca does not lump so easily this way
- Cook the tapioca over a double boiler for 15 minutes stirring frequently
- Remove from heat stir in the pineapple
- Garnish with a slice of whole pineapple
- Serve with whipped cream or ice cream
