Pineapple Roast

Ingredients

  • beef roast
  • 5 to 6 potatoes peeled and quartered
  • 1 large can pineapple juice
  • butter

Directions

  1. In electric skillet brown roast on all sides in butter
  2. Pour enough water to cover roast simmer 2 to 3 hours
  3. Add more water during simmering if necessary
  4. Drain water if any and place potatoes in skillet with roast
  5. Pour in pineapple juice
  6. Cook until juice becomes thick-like sauce and potatoes are tender
