Pineapple Sweet Potatoes

Ingredients

• 4 medium sweet potatoes unpeeled
• vegetable oil spray
• 12 c pineapple juice
• 2 Tbsp vegetable oil
• 2 Tbsp crushed pineapple
• 12 tsp cinnamon
• 12 tsp nutmeg
• 12 tsp allspice
• 1 Tbsp molasses
• 1 Tbsp margarine

Directions

1. Boil potatoes until tender approximately 30 minutes
2. Remove skins
3. Preheat oven to 425
4. Lightly spray a 1-quart baking dish with vegetable spray
5. Mash potatoes
6. Add pineapple juice oil and whip until fluffy
7. Add pineapple cinnamon nutmeg and allspice
8. Mix well
9. Place in baking dish
10. Spread molasses over the top
11. Dot with margarine
12. Bake uncovered for 15 minutes or until thoroughly heated
