Pineapple Zucchini Bread
Ingredients
- 1 c vegetable oil
- 3 eggs
- 12 packets artificial sweetener
- 1 tsp vanilla
- 2 c zucchini shredded
- 1 can 85 oz unsweetened crushed pineapple in juice drained
- 3 c all-purpose flour
- 1-12 tsp ground cinnamon
- 1 tsp baking soda
- 34 tsp ground nutmeg
- 34 tsp salt
- 1 c raisins
- 12 c chopped walnuts optional
Directions
- Mix oil eggs sweetener and vanilla in large bowl stir in zucchini and pineapple
- Combine flour cinnamon baking soda nutmeg and salt in medium bowl stir into mixture
- Stir in raisins and walnuts
- Spread batter evenly in 2 greased and floured 8-12 x 4-12 x 2-12-inch loaf pans
