Pineapple Zucchini Bread

Ingredients

  • 1 c vegetable oil
  • 3 eggs
  • 12 packets artificial sweetener
  • 1 tsp vanilla
  • 2 c zucchini shredded
  • 1 can 85 oz unsweetened crushed pineapple in juice drained
  • 3 c all-purpose flour
  • 1-12 tsp ground cinnamon
  • 1 tsp baking soda
  • 34 tsp ground nutmeg
  • 34 tsp salt
  • 1 c raisins
  • 12 c chopped walnuts optional

Directions

  1. Mix oil eggs sweetener and vanilla in large bowl stir in zucchini and pineapple
  2. Combine flour cinnamon baking soda nutmeg and salt in medium bowl stir into mixture
  3. Stir in raisins and walnuts
  4. Spread batter evenly in 2 greased and floured 8-12 x 4-12 x 2-12-inch loaf pans
