Pinto Fiesta Cake

Ingredients
- 2 c mashed unseasoned pinto beans
- 1 c sugar
- 14 c butter
- 34 c egg substitute
- 1 c unsifted flour
- 1 tsp baking soda
- 12 tsp salt
- 1 tsp cinnamon
- 12 tsp ground cloves
- 12 tsp allspice
- 2 c chopped raw apple
- 1 c raisins
- 12 c chopped walnuts or pecans
- 2 tsp vanilla
- 12 tsp raspberry jelly
Directions
- Cream together sugar and butter
- Add eggs and mix well
- Add beans and mix well
- Sift together flour soda salt cinnamon cloves and allspice
- Add dry ingredients to bean mixture and mix well
- Add apples raisins nuts and vanilla
- Spoon mixture into well-greased 10-inch tube pan or 2 loaf pans
- Bake at 375 for 45 minutes check for doneness with toothpick
- Cool in pan about 20 minutes and remove from pan
- Melt jelly and spoon over the top Decorate with walnut halves if desired
- Makes 12 servings
