Pinto Fiesta Cake

Ingredients

  • 2 c mashed unseasoned pinto beans
  • 1 c sugar
  • 14 c butter
  • 34 c egg substitute
  • 1 c unsifted flour
  • 1 tsp baking soda
  • 12 tsp salt
  • 1 tsp cinnamon
  • 12 tsp ground cloves
  • 12 tsp allspice
  • 2 c chopped raw apple
  • 1 c raisins
  • 12 c chopped walnuts or pecans
  • 2 tsp vanilla
  • 12 tsp raspberry jelly

Directions

  1. Cream together sugar and butter
  2. Add eggs and mix well
  3. Add beans and mix well
  4. Sift together flour soda salt cinnamon cloves and allspice
  5. Add dry ingredients to bean mixture and mix well
  6. Add apples raisins nuts and vanilla
  7. Spoon mixture into well-greased 10-inch tube pan or 2 loaf pans
  8. Bake at 375 for 45 minutes check for doneness with toothpick
  9. Cool in pan about 20 minutes and remove from pan
  10. Melt jelly and spoon over the top Decorate with walnut halves if desired
  11. Makes 12 servings
