Pioneer Skillet Bread
Ingredients
- 23 c white or yellow cornmeal
- 14 tsp baking soda
- 1 c buttermilk
- 4 Tbsp vegetable oil
- 1 tsp baking powder
- 12 tsp salt
- 1 egg
Directions
- Preheat oven to 425
- Prepare a fire so you will have hot coals on the hearth
- Put dry ingredients unsifted in bowl
- Mix in buttermilk and egg
- Add 2 tablespoons of vegetable oil and mix thoroughly
- Put remaining oil in 9-inch cast-iron skillet If baking in fireplace use cast-iron skillet with legs called spider pan
- Heat skillet in oven or over coals for 5 to 10 minutes
- In oven pour batter into skillet and bake 25 to 30 minutes or until brown
- Cut into wedges and serve with butter
