Pioneer Skillet Bread

Ingredients

  • 23 c white or yellow cornmeal
  • 14 tsp baking soda
  • 1 c buttermilk
  • 4 Tbsp vegetable oil
  • 1 tsp baking powder
  • 12 tsp salt
  • 1 egg

Directions

  1. Preheat oven to 425
  2. Prepare a fire so you will have hot coals on the hearth
  3. Put dry ingredients unsifted in bowl
  4. Mix in buttermilk and egg
  5. Add 2 tablespoons of vegetable oil and mix thoroughly
  6. Put remaining oil in 9-inch cast-iron skillet If baking in fireplace use cast-iron skillet with legs called spider pan
  7. Heat skillet in oven or over coals for 5 to 10 minutes
  8. In oven pour batter into skillet and bake 25 to 30 minutes or until brown
  9. Cut into wedges and serve with butter
