Ingredients

  • 1 pkg active dry yeast
  • 1 tsp sugar
  • 1 14 c lukewarm water
  • 3 12 c all-purpose flour unbleached
  • 1 tsp salt
  • 1 Tbsp olive oil
  • corn meal

Directions

  1. Sprinkle yeast and sugar in water stir to dissolve
  2. Set aside to proof
  3. Measure flour and salt into a large bowl make a well and stir in yeast mixture
  4. Knead dough until it is smooth
  5. Dough will be sticky at first
  6. Use olive oil on hands to facilitate kneading
  7. A few drops at a time will surface
  8. Knead dough at least 10 minutes until it is no longer sticky
  9. Grease top of dough turn dough to coat surface
  10. Cover bowl set aside 1 hour to rise
