Pita Bread
Ingredients
- 5 to 5 14 c whole wheat flour or part whole wheat and part unbleached
- 12 tsp salt
- 2 Tbsp yeast
- 2 c very warm but not hot water
Directions
- Mix ingredients together and add more flour if necessary
- Make into 2 balls
- Knead each ball then divide into 12 smaller balls Cover
- Let rise about 30 to 40 minutes
- Flatten balls to about 6 inches in diameter with rolling pin on a lightly floured board Cover and let rise slightly
- Flip the dough so that the bottom side of the bread dough is on the top side of baking sheets Preheat oven as hot as it bakes
- Place sheet on lowest rack
- Bake about 2 to 4 minutes
- Makes 24 pita breads
