Plantation Soup
Ingredients
- 3 c beef broth
- 3 carrots pared and chopped
- 3 stalks celery chopped
- 3 Tbsp Crisco
- 3 Tbsp all-purpose flour
- 3 c milk
- 12 c finely shredded Cheddar cheese
- 13 c chopped onion
Directions
- Combine broth carrots celery and onion in a saucepan Bring to a boil then reduce heat and simmer for 30 minutes or until vegetables are tender
- Strain reserve broth and vegetables separately
- Melt Crisco in a saucepan
- Blend in flour until it bubbles
- Add milk slowly stirring constantly
- Bring to a boil for 2 minutes
- Combine broth and white sauce simmer 20 minutes Add cheese and garnish with reserved vegetables
