Poached Catfish
Ingredients
- 1 catfish fillet 5 to 7 ounces
- 1 Tbsp melted butter or margarine
- 1 Tbsp dry white wine
- 12 tsp lemon juice
- 12 tsp dried thyme leaves
- 12 tsp dried tarragon leaves
- 12 tsp paprika
- salt
- ground white pepper
- parsley sprigs optional
- lemon wedge optional
Directions
- In medium sized microwave-safe dish place fish
- In cup combine butter wine lemon juice thyme tarragon paprika and salt and pepper to taste
- Cover and microwave on High 100 power 2 12 minutes or until fish flakes when tested with fork
- Rotate dish one-quarter turn halfway through cooking time
- To serve garnish with parsley and lemon
