Poached Fish With Sauce

Ingredients

  • whole fish
  • 12 c Wesson oil
  • 2 Tbsp sesame oil
  • 1 Tbsp chopped garlic
  • 14 c shoyu
  • 2 Tbsp oyster sauce
  • 2 Tbsp mirin
  • ginger finely chopped
  • green onions finely chopped
  • Chinese parsley finely chopped

Directions

  1. Bring water to boil
  2. Place fish in water bring to boil again
  3. Turn burner off cover pot and let fish stand for 15 to 20 minutes 1 pound15 minutes 2 pounds20 minutes
  4. Toothpick goes through fish easily if done
  5. Remove fish from water and place in platter
  6. Garnish with finely chopped ginger green onions and Chinese parsley
  7. To prepare sauce saute oils and garlic
  8. Add shoyu oyster sauce and mirin
  9. Bring to a boil and pour over fish
