Pocahontas Pie

Ingredients

  • 1 baked pie shell
  • 1 lb can pumpkin
  • 1 egg separated
  • 12 c half and half
  • 13 c plus 1 Tbsp brown sugar firmly packed
  • 12 tsp salt
  • 1 tsp cinnamon
  • 12 tsp nutmeg
  • 14 tsp ginger
  • 18 tsp cloves
  • 1 envelope unflavored gelatin
  • 1 c miniature marshmallows
  • 1 7 oz can Reddi-Wip

Directions

  1. Combine pumpkin egg yolk half and half 13 cup brown sugar salt and spices in a heavy saucepan
  2. Mix thoroughly
  3. Sprinkle gelatin over surface and let stand 5 minutes
  4. Bring entire mixture to a full boil stirring constantly
  5. Remove from heat and add marshmallows stir until melted
  6. Chill until slightly thickened
  7. Fold in egg white beaten to a meringue with 1 tablespoon brown sugar
  8. Put in cooled shell
  9. Chill in refrigerator several hours
  10. Just before serving top with Reddi-Wip
