Polk Salad

Ingredients
- polk greens
- onions
- eggs
- salt to taste
Directions
- Gather polk greens in spring of year
- Look and wash well Parboil greens rinse
- Boil again
- Put 2 tablespoons of soda in water rinse well
- Squeeze out all the water you can
- Put greens and cut up onion in skillet with fair amount of Crisco
- Cook until onion is translucent
- I like to scramble 3 or 4 eggs then mix with cooked greens
