Ingredients

  • 1 cake yeast
  • 12 c sugar
  • 7 c flour
  • 1 pt milk scalded and cooled
  • grated rind of orange or lemon
  • 4 yolks and 1 whole egg
  • 12 tsp vanilla
  • 1 tsp salt
  • 14 lb butter

Directions

  1. Dissolve yeast in lukewarm milk add 2 cups flour
  2. Let stand in warm place about 12 hour
  3. Then beat eggs sugar vanilla grated rind and scant teaspoon salt
  4. Beat until light
  5. Add this to sponge
  6. Melt butter and add this to sponge
  7. Add 5 cups of flour
  8. Cover and allow to rise for about 1 hour or until double in bulk
  9. When light turn on board and pat with hands until dough is 12-inch thick
  10. Cut and let rise again until light
  11. Cook in deep oil
