Pork And Lentil Bake

Ingredients

  • 1 12 c dry lentils
  • 2 c water
  • 1 Tbsp parsley flakes
  • 12 tsp seasoned salt
  • 1 bay leaf
  • 1 lb bulk pork sausage
  • 1 small onion chopped
  • 1 stalk celery chopped
  • 1 clove garlic minced
  • 2 Tbsp flour
  • 1 can tomatoes
  • 12 c grated Parmesan or Romano cheese

Directions

  1. Place lentils in 2-quart ovenware casserole dish
  2. Cover with water
  3. Add parsley bay leaf and salt
  4. Cover and cook for 20 minutes
  5. Stir and turn dish every 5 minutes
  6. Let stand covered when removed from microwave
  7. Brown sausage in an 8-inch baking dish
  8. Add onion celery and garlic
  9. Cook and stir until onion is tender
  10. Remove from oven and blend in flour
  11. Cook 1 minute Stir in tomatoes breaking them apart
  12. Add combined lentils and sausage
  13. Sprinkle with Parmesan or Romano cheese and cook for 10 minutes
