Pork And Pepper Goulash

Ingredients

  • 1 lb lean pork bite-sized cubes cut from shoulder and fat discarded
  • 2 slices bacon cut in 1-inch pieces
  • 1 large onion halved and sliced
  • 1 green pepper cut in strips
  • 1 red pepper cut in strips
  • 1 tomato chopped coarsely
  • 2 to 3 tsp paprika
  • 2 cloves garlic minced
  • 1 tsp caraway seed
  • 1 tsp salt
  • 2 tsp cornstarch
  • 14 c chicken broth beef broth or water

Directions

  1. Cut pork into 34 to 1-inch cubes
  2. Heat bacon in heavy skillet
  3. Cook until crisp
  4. Add onion
  5. Saute for 2 minutes until onion is wilted
  6. Add pork cubes to pan along with green and red peppers tomato paprika garlic caraway seed and salt
  7. Cook stirring over high heat for 5 minutes
  8. Turn heat down to low cover and simmer for 10 minutes
  9. Meanwhile stir cornstarch and broth together until smooth
  10. Pour mixture into pan with meat and peppers
  11. Heat to boiling stir and cook until juices are thickened
