Pork And Pepper Goulash
Ingredients
- 1 lb lean pork bite-sized cubes cut from shoulder and fat discarded
- 2 slices bacon cut in 1-inch pieces
- 1 large onion halved and sliced
- 1 green pepper cut in strips
- 1 red pepper cut in strips
- 1 tomato chopped coarsely
- 2 to 3 tsp paprika
- 2 cloves garlic minced
- 1 tsp caraway seed
- 1 tsp salt
- 2 tsp cornstarch
- 14 c chicken broth beef broth or water
Directions
- Cut pork into 34 to 1-inch cubes
- Heat bacon in heavy skillet
- Cook until crisp
- Add onion
- Saute for 2 minutes until onion is wilted
- Add pork cubes to pan along with green and red peppers tomato paprika garlic caraway seed and salt
- Cook stirring over high heat for 5 minutes
- Turn heat down to low cover and simmer for 10 minutes
- Meanwhile stir cornstarch and broth together until smooth
- Pour mixture into pan with meat and peppers
- Heat to boiling stir and cook until juices are thickened
