Pork Chop Casserole

Ingredients

  • 34 c brown or long grain white rice
  • 1 15 oz can tomatoes diced
  • 14 c chopped green pepper
  • 12 tsp chili powder
  • 12 tsp salt
  • dash of pepper
  • 4 to 5 pork chops trimmed
  • 1 large onion cut in large slices 1 per pork chops
  • green pepper rings 1 per pork chop
  • 4 to 5 whole fresh mushrooms
  • 4 oz shredded Mozzarella cheese

Directions

  1. Precook rice 8 minutes at Full power in microwave with 1 cup water let sit 5 minutes
  2. Mix well together the rice diced tomatoes chopped green pepper chili powder salt and pepper Place in 12 x 8 x 2-inch baking dish
  3. Arrange pork chops over the mixture
  4. Sprinkle each pork chop with salt top with an onion slice
  5. Cover tightly with foil
  6. Bake at 325 for 1 14 hours Remove foil and sprinkle Mozzarella cheese over pork chops
  7. Place green pepper ring and mushroom on top of each chop
  8. Bake 10 to 15 minutes longer
