Pork Chop Spanish Rice
Ingredients
- 5 pork chops
- 2 Tbsp shortening
- 1 tsp salt
- 12 tsp chili powder
- dash of pepper
- 34 c uncooked long grain rice
- 12 c chopped onion
- 14 c chopped green pepper
- 3 12 c tomatoes
- 2 oz sharp American cheese shredded 12 c
Directions
- Trim excess fat from chops
- Slowly brown chops in melted shortening about 15 to 20 minutes drain off excess fat
- Combine salt chili powder and pepper
- Sprinkle over meat
- Add rice onion and chopped green pepper
- Pour tomatoes over
- Cover and cook over low heat 35 minutes stirring occasionally
- Add green pepper and cook 5 minutes or until meat is tender
- Sprinkle with cheese
- Makes 5 servings
