Pork Chops And Rice For Two

Ingredients

  • 2 center cut pork chops at least 12-inch thick
  • 1 medium onion sliced 14-inch thick
  • 1 16 oz can tomatoes
  • 14 c rice

Directions

  1. Brown pork chops on both sides
  2. Salt and pepper
  3. Cover the chops generously with rice which has been partially cooked about 5 minutes
  4. Place onion slices on top of the rice then top the rice with the tomatoes
  5. Cover and cook slowly until chops are tender
  6. The juice from the tomatoes may be poured around the chops and a little water added from time to time
