Pork Chops NicoiseServes 6

Ingredients

  • 6 pork chops
  • 1 Tbsp olive oil
  • 4 chopped tomatoes
  • 2 garlic cloves minced
  • 1 chopped green bell pepper
  • 1 tsp basil
  • 12 c black olives
  • 14 c red wine

Directions

  1. Heat the olive oil in a large skillet and fry pork chops until lightly browned
  2. Add the tomatoes garlic pepper basil and wine
  3. Cover and simmer for 30 minutes turning chops once
  4. Add olives and cook over low heat for 10 minutes
  5. Serve with rice
