Pork Chops NicoiseServes 6

Ingredients
- 6 pork chops
- 1 Tbsp olive oil
- 4 chopped tomatoes
- 2 garlic cloves minced
- 1 chopped green bell pepper
- 1 tsp basil
- 12 c black olives
- 14 c red wine
Directions
- Heat the olive oil in a large skillet and fry pork chops until lightly browned
- Add the tomatoes garlic pepper basil and wine
- Cover and simmer for 30 minutes turning chops once
- Add olives and cook over low heat for 10 minutes
- Serve with rice
