Pork Chops With Apricot Sauce
Ingredients
- 8 dried apricot halves
- 1 c chicken stock
- 1 Tbsp oil
- 4 1-inch thick pork chops about 2 lb
- salt and pepper
- 2 tsp Dijon mustard
Directions
- Cut the apricot halves into thin strips and combine with the stock
- Set aside
- In a large frying pan heat oil over medium heat
- Sprinkle chops with salt and pepper and saute until browned 6 to 8 minutes per side
- Remove chops from pan and cover to keep warm
- Add stock and apricots to pan
- Bring to boil scraping up browned bits and boil until stock is reduced to about 12 cup
- Remove from heat
- Add the mustard and stir until smooth
- Pour the sauce over the pork chops to serve
