Pork Chops With Scalloped Potatoes

Ingredients

  • 3 Tbsp butter or oleo
  • 3 Tbsp flour
  • 1 12 tsp pepper
  • 1 14 12 oz can chicken broth
  • 6 pork chops
  • 3 Tbsp oil
  • salt and pepper
  • 6 c thinly sliced peeled potatoes
  • 1 medium onion sliced
  • paprika and fresh parsley optional

Directions

  1. In a saucepan melt butter Stir in flour salt and pepper Add chicken broth cook and stir until mixture boils Cook for 1 minute Remove from heat and set aside
  2. In a skillet brown chops in oil Season more if desired
  3. In a greased 9 x 13 x 2-inch baking dish layer potatoes and onion Pour broth mixture over Place chops on top
  4. Cover and bake 1 hour at 350 Uncover and bake 30 minutes longer or until potatoes are tender Sprinkle with parsley and paprika if desired
