Pork Fried Rice
Ingredients
- 3 Tbsp butter or margarine
- 3 eggs well beaten
- 1 12 c cubed cooked pork
- 4 c cold cooked long grain white rice 1 13 c before cooking
- 3 green onions or scallions sliced thin
- 1 8 oz can green peas drained
- 3 Tbsp soy sauce
- 12 tsp sugar
Directions
- In a large skillet melt butter over moderate heat
- Add eggs and stir with a fork until well cooked
- Add cubed pork rice and green onions
- Cook over moderate heat for 5 minutes stirring frequently
- Add peas soy sauce and sugar to rice mixture
- Mix well
- Continue cooking 5 to 10 minutes stirring very frequently to prevent sticking until mixture is hot
- Makes 6 servings
- Good with bean sprout salad and Oriental style vegetables followed by ice cream
