Pork Roast Stuffed With Sauerkraut

Ingredients
- pork shoulder (fresh)
- sauerkraut
- various seasonings
Directions
- Remove bone from pork shoulder.
- Drain sauerkraut and stuff in the shoulder.
- Roll shoulder in flour with various seasonings to taste.
- Close opening with sewing or skewers.
- Place roast in oven at 450°, uncovered, in a greased pan.
- Reduce heat as it begins to brown to 325° and bake about 40 minutes per pound or until tender.
