Portuguese Breakfast
Ingredients
- 1 lb bacon
- 2 12 lb tomatoes
- 4 or 5 eggs
- 4 or 5 pieces toast
Directions
- Cook bacon in a 10-inch skillet
- Remove bacon and pour off grease
- Chop up tomatoes into small pieces
- Put tomatoes into skillet and simmer until tomatoes are stewed lots of liquid Add cooked bacon to tomatoes mix together
- Poach eggs in tomatoes and bacon
- As eggs cook let some of the liquid cook off
- When eggs are firm cut through all sections and place on toast
