Pot Roast Meat Loaf

Ingredients

  • 1 lb ground lean beef
  • 23 c canned milk
  • 13 c Progresso Italian style bread crumbs
  • 1 tsp salt
  • 14 to 2 tsp Worcestershire sauce
  • 14 tsp pepper
  • dash of minced garlic
  • 2 strips bell pepper chopped fine
  • 3 medium potatoes
  • 3 onions sliced 14 inch thick
  • 3 medium carrots sliced lengthwise
  • 2 tsp dried parsley flakes
  • 1 tsp salt
  • few grains pepper

Directions

  1. Mix first 8 and shape into a loaf in center of a 13 x 9 x 2-inch pan
  2. Peel and slice potatoes onions and carrots sliced lengthwise
  3. Mix parsley flakes salt and pepper
  4. Place vegetables in layers around meat
  5. Sprinkle each layer with part of salt mixture
  6. Cover pan tightly with foil
  7. Bake in 375 oven for 1 hour or until vegetables are tender
  8. Uncover and bake 10 minutes more to brown meat
  9. Serves 4
