Potato-Ham Scallop
Ingredients
- 2 c cubed fully-cooked ham
- 6 medium potatoes peeled and thinly sliced 2 lb
- 14 c finely chopped onion
- 13 c all-purpose flour
- 2 c milk
- 3 Tbsp fine dry bread crumbs
- 1 Tbsp butter or margarine melted
- 2 Tbsp finely snipped parsley
Directions
- Heat oven to 350
- Place

- of the ham in a 2-quart casserole
- Cover with half the potatoes and half of the onion Sift half of the

- season

- and pepper Repeat layering ham potatoes and onion
- Season with additional salt and pepper
- Sift remaining flour atop
- Pour milk over all Bake covered in oven
- for

- 14 hours or until potatoes are nearly tender
- Uncover
- Combine bread crumbs and melted butter
