Potato And Cabbage Slaw
Ingredients
- 1 14 lb red potatoes
- 1 small head cabbage 1 12 lb
- 2 Tbsp sugar
- 2 Tbsp chopped parsley
- 3 Tbsp orange juice
- 1 Tbsp red wine vinegar
- 1 Tbsp olive oil
- 1 12 tsp salt
- 14 tsp pepper
Directions
- Cut potatoes in 12-inch cubes
- Cover with water heat to boiling
- Reduce heat and simmer 10 minutes until tender
- Drain and cool
- Slice cabbage
- Toss potatoes cabbage and remaining ingredients
- Cover and refrigerate
