Potato Dumplings
Ingredients
- 6 medium-sized potatoes
- 3 eggs
- 2 Tbsp flour
- buttered crumbs
Directions
- Boil potatoes and let stand for a few hours or overnight still in their jackets
- Peel potatoes and mash them or put through a ricer then add the eggs and flour
- Roll the mixture into little balls
- Chill in refrigerator for about an hour before cooking
- Cook in lightly salted water that is just under the boiling point
- When dumplings are done will rise to top
- Serve hot with melted brown butter and crumbs
