Potato Fudge Cake

Ingredients

  • 2 c sugar
  • 1 c butter
  • 1 c white potatoes boiled and put through strainer
  • 34 c milk
  • 2 c all-purpose flour
  • 4 eggs
  • 2 tsp baking powder
  • 12 tsp salt
  • 3 sq melted chocolate unsweetened
  • 1 tsp vanilla

Directions

  1. Preheat oven to 350
  2. Cream the butter and sugar then add potatoes beat well
  3. Add eggs one at a time beating well after each addition
  4. Sift dry ingredients and add alternately with milk
  5. Add melted chocolate and vanilla beat well
  6. Bake in 3 layers until sides of layers leave pan
