Potato Fudge Cake
Ingredients
- 2 c sugar
- 1 c butter
- 1 c white potatoes boiled and put through strainer
- 34 c milk
- 2 c all-purpose flour
- 4 eggs
- 2 tsp baking powder
- 12 tsp salt
- 3 sq melted chocolate unsweetened
- 1 tsp vanilla
Directions
- Preheat oven to 350
- Cream the butter and sugar then add potatoes beat well
- Add eggs one at a time beating well after each addition
- Sift dry ingredients and add alternately with milk
- Add melted chocolate and vanilla beat well
- Bake in 3 layers until sides of layers leave pan
