Potato Kugel Pudding

Ingredients
- 3 Grated potatoes by hand in blender or with grinder
- 1 onion grated
- 1 carrot optional
- 1 egg
- 34 tsp salt
- 18 tsp pepper
- 2 Tbsp matzo meal or flour
- 2 Tbsp butter or margarine
Directions
- Grate potatoes draining excess waterGrate onion and carrot add to potatoes
- Mix in remaining ingredients and pour into an 8 inch or 9 inch square greased pan
- Sprinkle with paprika to aid in browning
- Bake at 375 for 1 hour or until golden brown on top
- Serves 2 to 3 - Can be doubled for a 9 x 13 pan
