Potato Logs
Ingredients
- 6 boiled potatoes mashed
- 12 small onion finely chopped and 12 c sour cream or 14 c sour cream and 14 c onion dip
- salt and pepper
- 14 tsp garlic powder
- 13 c Parmesan cheese
- 2 c fine bread crumbs dried
- 4 Tbsp margarine
Directions
- Combine all ingredients except 2 tablespoons of margarine cheese and crumbs
- Use 12 to 23 cup of potato mixture for each log to be formed
- Melt remaining 2 tablespoons of margarine stir in crumbs and cheese
- Roll potato logs in crumb mixture
- Place in shallow greased baking dish
- Bake uncovered at 375 for 30 minutes
