Potato Pancakes

Ingredients

  • 3 c well-drained shredded raw potatoes 4 medium potatoes
  • 14 c grated onion
  • 3 to 4 Tbsp flour
  • 1 tsp baking powder
  • 2 eggs slightly beaten
  • 3 Tbsp Crisco

Directions

  1. Combine all ingredients and mix well
  2. Heat some vegetable oil in a skillet over moderate heat
  3. Spoon 14 cup potato mixture into skillet for each pancake
  4. Spread carefully to make a 3-inch cake
  5. Cook until browned on both sides turning once
  6. They should brown nicely in 8 to 10 minutes
  7. Makes 6 to 8 pancakes
