Potato Pancakes
Ingredients
- 3 c well-drained shredded raw potatoes 4 medium potatoes
- 14 c grated onion
- 3 to 4 Tbsp flour
- 1 tsp baking powder
- 2 eggs slightly beaten
- 3 Tbsp Crisco
Directions
- Combine all ingredients and mix well
- Heat some vegetable oil in a skillet over moderate heat
- Spoon 14 cup potato mixture into skillet for each pancake
- Spread carefully to make a 3-inch cake
- Cook until browned on both sides turning once
- They should brown nicely in 8 to 10 minutes
- Makes 6 to 8 pancakes
