Potato SaladLow-Fat

Ingredients

  • 34 lb red potatoes unpeeled
  • 12 c diced onion
  • 12 c diced celery
  • 14 c chopped green pepper
  • 14 c chopped red pepper
  • 14 c grated carrot
  • 14 c diced dill pickle
  • 14 c sweet pickle relish
  • 1 2 oz jar diced pimento
  • 14 c plain nonfat yogurt
  • 14 c reduced-fat mayonnaise
  • 2 Tbsp spicy brown mustard
  • 18 tsp pepper
  • 18 tsp red pepper

Directions

  1. Wash potatoes cut into 12-inch cubes
  2. Cook in boiling water to cover 8 to 10 minutes until tender
  3. Drain and let cool Combine potatoes and next 8 ingredients
  4. Toss gently set aside
