Potato SaladLow-Fat
Ingredients
- 34 lb red potatoes unpeeled
- 12 c diced onion
- 12 c diced celery
- 14 c chopped green pepper
- 14 c chopped red pepper
- 14 c grated carrot
- 14 c diced dill pickle
- 14 c sweet pickle relish
- 1 2 oz jar diced pimento
- 14 c plain nonfat yogurt
- 14 c reduced-fat mayonnaise
- 2 Tbsp spicy brown mustard
- 18 tsp pepper
- 18 tsp red pepper
Directions
- Wash potatoes cut into 12-inch cubes
- Cook in boiling water to cover 8 to 10 minutes until tender
- Drain and let cool Combine potatoes and next 8 ingredients
- Toss gently set aside
