Potato Skins
Ingredients
- 3 medium baking potatoes
- 1 c shredded Cheddar cheese
- 6 slices bacon cooked and crumbled
- oil for deep frying
- sour cream
Directions
- Scrub potatoes thoroughly and rub skins with oil
- Bake at 400 for 1 hour or until done
- Cool potatoes
- Cut in half lengthwise Carefully scoop out pulp leaving 14 to 18-inch shell
- Pulp may be reserved for mashed potatoes
- Deep fry shells in oil for 2 minutes until light brown
- Drain on paper towels
- Place skins on baking sheet sprinkle with cheese and bacon
- Place under broiler until cheese melts
- Serve with sour cream
