Potato Skins

Ingredients

  • 3 medium baking potatoes
  • 1 c shredded Cheddar cheese
  • 6 slices bacon cooked and crumbled
  • oil for deep frying
  • sour cream

Directions

  1. Scrub potatoes thoroughly and rub skins with oil
  2. Bake at 400 for 1 hour or until done
  3. Cool potatoes
  4. Cut in half lengthwise Carefully scoop out pulp leaving 14 to 18-inch shell
  5. Pulp may be reserved for mashed potatoes
  6. Deep fry shells in oil for 2 minutes until light brown
  7. Drain on paper towels
  8. Place skins on baking sheet sprinkle with cheese and bacon
  9. Place under broiler until cheese melts
  10. Serve with sour cream
