Potato Skins

Ingredients

  • 8 large baking potatoes baked and slightly cooled
  • 2 Tbsp melted butter
  • 34 lb bacon fried and crumbled
  • 6 scallions minced optional
  • 34 c grated Cheddar cheese

Directions

  1. Cut potatoes in half lengthwise then cut each half into thirds
  2. Scoop out potato pulp leaving skin intact
  3. Use potato pulp for mashed potatoes or hash browns
  4. Sprinkle skins evenly with butter then bacon and onion if used
  5. Sprinkle with cheese Bake in a 350 oven for 15 minutes or until crisp
  6. Serve hot Makes 48 servings
