Potato Smoked Sausage Casserole

Ingredients

  • 4 medium potatoes cooked and peeled
  • 12 lb smoked sausage thinly sliced
  • 14 c chopped onion
  • 14 c margarine
  • 14 c plus 2 Tbsp flour
  • 12 tsp salt
  • 14 tsp pepper
  • 14 tsp thyme crushed
  • 2 c milk
  • 1 c frozen or canned peas rinsed and drained
  • 3 Tbsp dry bread crumbs
  • 1 Tbsp margarine melted

Directions

  1. Pare and slice enough potatoes to equal 2 cups set aside Cook onion in 14 cup margarine until tender
  2. Blend in flour and seasonings
  3. Gradually add milk stirring until smooth
  4. Cook stirring constantly until mixture is slightly thickened
  5. Place half of sausage in bottom of 2-quart ovenproof casserole
  6. Add half of potatoes half of peas and half of sauce
  7. Repeat layers with remaining ingredients ending with sauce
  8. Combine crumbs and margarine sprinkle over sauce
  9. Bake at 350 for 20 to 30 minutes or until crumbs are lightly browned
  10. Makes 4 servings
