Potato Souffle

Ingredients
- 4 Tbsp chopped onion
- 3 Tbsp melted butter
- 1 c milk
- 2 Tbsp flour
- salt and pepper to taste
- 2 eggs separated
- 3 c leftover mashed potatoes
Directions
- Brown onion in butter
- Add flour and then milk
- Add egg yolks and sauce to potatoes mix well then fold in beaten egg whites
- Bake in a greased dish in oven about 25 or 30 minutes at 350
