Potato Tuna Chowder

Ingredients
- 2 Tbsp butter or margarine
- 12 c chopped onion
- 6 medium potatoes peeled and sliced
- 2 medium carrots peeled and diced
- 12 c diced celery
- 1 can tuna drained
- 4 c milk
- salt and pepper to taste
- minced parsley
Directions
- Melt butter in large saucepan
- Saute onion until transparent Add potatoes carrots celery and 2 cups water
- Bring to a boil
- Cover and simmer 25 to 30 minutes or until vegetables are tender stirring constantly
- Add tuna and milk
- Heat through Season to taste and serve sprinkled with parsley
- Serves 8
