Potato Wedges

Ingredients

  • 6 medium potatoes
  • water
  • dash of salt
  • 3 Tbsp oil
  • 12 tsp salt
  • dash of black pepper
  • 12 tsp dried thyme leaves
  • dash of cayenne pepper
  • 13 c grated Parmesan cheese
  • 2 Tbsp grated Cheddar cheese

Directions

  1. Scrub unpeeled potatoes well
  2. Cut each potato in half lengthwise
  3. Then cut into even wedges
  4. Boil potato wedges for 5 minutes in salted water
  5. Drain
  6. Pat dry
  7. Spread wedges in a single layer on a lightly greased baking sheet
  8. Sprinkle with oil spices and herbs
  9. Bake at 425 for 15 minutes
  10. Sprinkle with cheese
  11. Bake at 425 to 450 for another 10 to 12 minutes or until potatoes are golden brown and cheeses are melted
