Potatoes And Mushrooms

Ingredients

• 8 to 10 small new potatoes
• 14 c butter melted
• 2 Tbsp green onions or chives chopped
• 12 lb mushrooms chopped
• 1 c meat stock
• 2 egg yolks
• 1 tsp lemon juice
• salt and pepper

Directions

1. Cook potatoes in jackets until tender
2. Drain and dry
3. Place in a casserole adding butter and chopped onion
4. Beat egg yolks and add lemon juice mushrooms and meat stock
5. Season with salt and pepper
6. Pour over potatoes in casserole
7. Bake uncovered in preheated 350 oven for 30 to 40 minutes
