Potatoes And Mushrooms

Ingredients
- 8 to 10 small new potatoes
- 14 c butter melted
- 2 Tbsp green onions or chives chopped
- 12 lb mushrooms chopped
- 1 c meat stock
- 2 egg yolks
- 1 tsp lemon juice
- salt and pepper
Directions
- Cook potatoes in jackets until tender
- Drain and dry
- Place in a casserole adding butter and chopped onion
- Beat egg yolks and add lemon juice mushrooms and meat stock
- Season with salt and pepper
- Pour over potatoes in casserole
- Bake uncovered in preheated 350 oven for 30 to 40 minutes
