Potatoes And Tomatoes With Fresh Coconut
Ingredients
- 5 medium-sized potatoes about 1 14 lb
- 4 Tbsp vegetable oil
- 6 cloves garlic peeled and finely chopped
- 1 whole dried hot red pepper
- 1 tsp whole cumin
- 2 tsp ground cumin
- 5 oz grated coconut
- 12 tsp ground turmeric
- 1 14 lb fresh tomatoes peeled and diced into 12-inch pieces or 16 to 20 oz tin Italian tomatoes
- 2 tsp salt and sugar
- 1 tsp red wine vinegar
Directions
- Peel potatoes then dice into 34-inch pieces and put into bowl of cold water
- Heat oil in heavy 3-quart pot over medium-high flame
- When hot add finely chopped garlic
- Stir about 5 seconds before adding red pepper and cumin seed
- Stir for another 3 seconds
- Garlic should brown lightly red pepper should darken and cumin seed should sizzle
- Lower heat to medium
- Add grated coconut and stir for 10 to 15 seconds
