Potatoes Au Gratin

Ingredients

  • 6 to 8 baking potatoes, baked in oven with skins on
  • 1 lb. Velveeta cheese, cut in chunks
  • 1 c. mayonnaise
  • 1 onion, chopped
  • salt and pepper
  • 6 strips bacon, chopped and sauteed until half cooked
  • 1/4 c. pimento-stuffed olives, sliced

Directions

  1. Remove skins from cooked potatoes and cut into large dice. Toss with next 4 ingredients.
  2. Pour into greased casserole and sprinkle with bacon and olives.
  3. Bake at 325° for 1 hour.
