Potluck Potatoes

Ingredients

  • 8 to 10 medium red potatoes 2 lb
  • 1 2 oz jar pimientos chopped and drained
  • 12 c chopped onion
  • 18 tsp onion salt
  • 18 tsp garlic salt
  • 1 lb American cheese cut into 12-inch cubes
  • 2 slices bread cut in cubes
  • 14 c oleo melted

Directions

  1. Cook unpeeled potatoes in water until soft but firm
  2. Drain and cut into 1-inch cubes
  3. Place in an ungreased 2 12-quart baking dish
  4. Add pimientos onion garlic and onion salt
  5. Toss gently
  6. Sprinkle with cheese
  7. Place bread cubes on top and pour oleo over
  8. Bake uncovered at 350 for 30 minutes or until bread is toasted
