Poverele Chilled Squash Salad With Fresh Mint

Ingredients

  • 3 lb zucchini squash small firm
  • 12 c white vinegar
  • 12 fresh mint leaves
  • 1 loaf crusty Italian bread

Directions

  1. Peel squash and cut into circles
  2. Cook squash until tender do not overcook
  3. Combine squash mint leaves fresh only and white vinegar
  4. Chill for 3 hours
  5. Serve with crusty Italian bread for dipping
