Primavera Vegetables With Linguine
Ingredients
- 2 Tbsp olive oil
- 1 14 c chopped onion
- 1 Tbsp garlic minced
- 1 c sliced zucchini
- 1 c sliced crookneck squash
- 1 c green or red pepper strips
- 1 34 c fresh or canned diced tomatoes reserve juice
- 23 c 6 oz tomato paste
- 34 c water
- salt and pepper
- 1 tsp dried basil
- 1 9 oz pkg refrigerated linguine
- sliced ripe olives optional
- chopped fresh basil optional
Directions
- In large skillet heat oil
- Saute onion and garlic for 1 minute
- Add zucchini yellow squash and bell pepper
- Saute 3 to 4 minutes
- Stir in reserved tomato juice tomato paste water salt and pepper
- Simmer for 5 to 8 minutes or until vegetables are tender
- Stir in tomatoes and basil and simmer 1 minute
