Pronto Potato Soup
Ingredients
- 8 bacon strips cut up
- 1 small onion chopped
- 1 12 c 2 c leftover mashed potatoes
- 1 can cream of chicken soup
- 1 to 2 cans milk
- 12 tsp salt
- 2 Tbsp chopped parsley
- dash of pepper
Directions
- In small frying pan brown bacon until crisp
- Remove and drain on paper towel
- Add onion to drippings in pan and saute 2 to 3 minutes
- Drain fat off
- Meanwhile in 3-quart saucepan mix cold potatoes and soup until smooth
- Add milk gradually stirring constantly to desired consistency over medium heat
- Add bacon and onions
- Season with salt pepper and parsley
