Pronto Potato Soup

Ingredients

  • 8 bacon strips cut up
  • 1 small onion chopped
  • 1 12 c 2 c leftover mashed potatoes
  • 1 can cream of chicken soup
  • 1 to 2 cans milk
  • 12 tsp salt
  • 2 Tbsp chopped parsley
  • dash of pepper

Directions

  1. In small frying pan brown bacon until crisp
  2. Remove and drain on paper towel
  3. Add onion to drippings in pan and saute 2 to 3 minutes
  4. Drain fat off
  5. Meanwhile in 3-quart saucepan mix cold potatoes and soup until smooth
  6. Add milk gradually stirring constantly to desired consistency over medium heat
  7. Add bacon and onions
  8. Season with salt pepper and parsley
