Prune Cake With Butterscotch Glaze

Ingredients

  • 2 c flour
  • 1 tsp soda
  • 14 tsp salt
  • 1 Tbsp cinnamon
  • 1 Tbsp allspice
  • 1 Tbsp nutmeg
  • 1 12 c coarsely cut cooked pitted and drained prunes
  • 1 c corn oil
  • 1 12 c sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 c buttermilk
  • 1 c chopped nut meats

Directions

  1. Sift flour and other dry ingredients set aside
  2. Beat oil and sugar in a large mixing bowl
  3. Add eggs one at a time beat well Stir in vanilla
  4. Add dry ingredients alternately with buttermilk
  5. Stir in prunes and nuts
  6. Pour into 9-inch tube pan with removable bottom Bake in 350 oven about one hour
