Prune Souffle

Ingredients

  • 12 c chopped nuts
  • 12 c grated bread crumbs
  • 2 Tbsp sugar
  • 14 tsp salt
  • 16 tsp cinnamon
  • 12 c prune juice
  • 1 Tbsp lemon juice
  • 1 c prune pulp
  • 2 eggs
  • grated lemon rind

Directions

  1. Mix the first 6 ingredients
  2. Remove the stones from the cooked prunes and force the pulp through a sieve
  3. Add lemon juice and prune pulp
  4. Stir in dry ingredients Add yolks of eggs beaten until light and lemon colored
  5. Fold in whites beaten until stiff
  6. Turn into greased baking dish and bake in a slow oven Set baking dish in pan of water
