Pueblo Beans

Ingredients
- 1 lb pinto beans dried
- 3 qt water
- 1 lb can tomatoes
- 1 large onion chopped
- 8 slices bacon chopped
- 1 12 tsp salt
- 34 c sliced celery
- 34 tsp cinnamon
- 6 Tbsp sugar
- 3 Tbsp vinegar
Directions
- Wash beans Put in a 6-quart kettle with 3 quarts water and simmer for about 4 hours Mix remaining ingredients with beans and water Place in a 4-quart casserole Cover and bake at 350 for 2 to 3 hours Add more water if necessary Yields about 10 servings
