Pueblo Beans

Ingredients

  • 1 lb pinto beans dried
  • 3 qt water
  • 1 lb can tomatoes
  • 1 large onion chopped
  • 8 slices bacon chopped
  • 1 12 tsp salt
  • 34 c sliced celery
  • 34 tsp cinnamon
  • 6 Tbsp sugar
  • 3 Tbsp vinegar

Directions

  1. Wash beans Put in a 6-quart kettle with 3 quarts water and simmer for about 4 hours Mix remaining ingredients with beans and water Place in a 4-quart casserole Cover and bake at 350 for 2 to 3 hours Add more water if necessary Yields about 10 servings
