Puff Pastry

Ingredients

  • 14 lb butter
  • 1 c boiling water
  • 1 c flour
  • 14 tsp salt
  • 4 eggs

Directions

  1. Bring water to a boil
  2. Add butter stirring until all butter is melted
  3. Add all at once flour and salt
  4. Cook stirring vigorously until mixture is smooth and forms soft ball that does not separate
  5. Cool slightly
  6. Add eggs one at a time beating after each egg until mixture is smooth
  7. Drop on greased cookie sheet
  8. Size depends on use small for appetizers or large for cream puffs
  9. Bake at 300 for 25 minutes
  10. Yields 50 small puffs
